[User Guide] Updating Meeting Schedule

Changing the User Guide team meeting schedule to line up with
the new Doc Team meeting decisions from the Octata Summit:

* Monthly speciality team meetings

* Moving to  0630 UTC for an APAC and EU workable timezone.
