Retire borg-ethercalc02 on the vexxhost backup server

This retires the borg-ethercalc02 backup user on our smaller backup
server via ansible automation. The bulk of this work was actually
previously performed manually, but doing so in git here records
everything and is a good exercise for the retirement machinery. A
followup will purge this user.
