Andy McCrae 07817a412c Fix BOOTSTRAP_OPTS
BOOTSTRAP_OPTS was surrounded by " ", which meant it would evaluate to:
-e 'BOOTSTRAP_OPTS', this became problematic if you wanted to add more
than one value.

By removing the " " this is resolved.
